Spinach, Mushroom and Cottage Cheese Crêpes
PREP TIME 10 mins COOK TIME 30 mins COURSE Breakfast SERVINGS 8

INGREDIENTS

Filling
1 cup cottage cheese
2 cups fresh spinach leaves
1 package sliced crimini mushrooms (8 oz)
1 tsp nutmeg
1/4 tsp salt
1/4 tsp pepper

Crêpes
1/2 stick unsalted butter
2 cups flour
21 oz milk
4 eggs
1/8 tsp salt

INSTRUCTIONS

Add the mushrooms to simmering basket of Thermomix® and fill the mixing bowl with 2 oz water. Steam on varoma setting for 4 minutes, then transfer to the mixing bowl after emptying the water and sauté on varoma setting for 4 minutes.
Add the spinach and cook for 2 minutes on varoma setting.
Add the cottage cheese and transfer to a mixing bowl.
Add the crepe ingredients and mix on speed 4 for 30 seconds. Let batter rest for 20 minutes.
Heat a cast iron skillet on medium heat and grease with butter.
Pour about 1/3 cup batter in the middle and swirl around the pan until set.
Cook for 1 minute, until bubbles form in the middle, then turn over carefully with a heat resistant spatula.
Top with spinach, mushroom, cheese filling and fold over twice.
Serve hot.

For three or four months I have visited the corner where we
sometimes used to meet for breakfast--though it is now far
out of my usual way----just to see your blood. That stain is no
longer a topic of conversation even incidentally among our
few remaining friends I occasionally come across. It black-
ened over the summer, picking up tire prints and a pigeon
feather, asphalt cooking up into it and joining you as it
might a flattened wad of gum. The last time I went to see,
you had so blended with the street that it took me a few
minutes to find the familiar outline. No need to keep
looking for the essence of what I've assumed to be our
shared memory and fading connection. I may sometimes
think to cast a passing glance at the spot on rare occasions
I find myself walking up that street, but will no longer stop
and kneel to look for the right light to catch you in.

This year, we received a number of nominations of short videos that combined both music and dialogue. Recent Reading: The Starless Sea

The most recent commute audiobook was The Starless Sea by Erin Morgenstern, of The Night Circus fame (although admittedly I have not read that one yet). This is a fantasy novel about Zachary, a young man swept into the drama of a secret underground society and the mysterious figures who surround it.
 
I finished this book on Sunday morning, catching the last 7 minutes of a whopping 19-hour runtime over breakfast, and since then I've settled into a relative disappointment. On paper, this book has so many things that should make it an ace in the hole for me: Book lovers! Cats! Secret magical societies! Queer characters! Women who are something Other taking control of their destinies! And yet, overall, this book just did not land for me.
 
As is a risk, I think, with all stories that are about the power of stories, The Starless Sea comes off a little pretentious and self-important. It is a book lauding the unmatched importance of books. I felt aware at various points throughout the book of how hard it was trying to appeal to people like me, who would enjoy the idea of a dark-paneled underground room with endless books and an on-demand kitchen, and this sense of pandering did take away from it at times.
 
However, it also does some interesting things with regards to what it is like to be the person in a story (such as the fate of Eleanor and Simon, once their part in the story is done) as well as the risks of valuing preservation over change and growth. Without giving too much away, there is a secret society in decline, and a woman so determined to prevent its downfall that she ends up causing significant harm to the organization she's trying to save because she is unwilling to accept that an end comes for all things. I enjoyed this theme and I felt like it was echoed well throughout the story, and in many ways it's easy to sympathize with her ultimate goals, if not her methods.

We gathered in a field southwest of town,
several hundred hauling coolers
and folding chairs along a gravel road
dry in August, two ruts of soft dust
that soaked into our clothes
and rose in plumes behind us.

By noon we could discern their massive coils
emerging from a bale of cloud,
scales scattering crescent dapples
through walnut fronds,
the light polarized, each leaf tip in focus.

As their bodies blotted out the sun,
the forest faded to silverpoint.
A current of cool air
extended from the bottomlands
an intimation of October,
and the bowl of sky deepened
its celestial archaeology.

Their tails, like banners of a vast army,
swept past Orion and his retinue
to sighs and scattered applause,
the faint wail of a child crying.
In half an hour they had passed on
in search of deep waters.

Before our company dispersed,
dust whirling in the wind,
we planned to meet again in seven years
for the next known migration.
Sunlight flashed on windshields

and caught along the riverbank
a cloudy, keeled scale
about the size of a dinner plate,
